Amelia Singer – Episode 3
We sat down recently with one of our favourite people Amelia Singer, known from The Wine Show and Amelia’s Wine, to explore offbeat wine and food pairings.
This round, she brings Moreau-Naudet’s Premier Cru Les Forêts – a beautifully poised Chablis that sits between classic oyster-shell precision and soft, expressive generosity. “It’s not too flinty or austere,” she says. “But it still has purity. It unites Chardonnay fans.”
The story adds weight. “The family’s been making wine since the 17th century. Stephane really put it on the map before his wife Virginie took over.” Amelia admires both the wine’s heritage and accessibility. “I only discovered it in California, at Raj Parr’s place. It was one of those quiet, powerful wines that stays with you.”
Then comes the wildcard. “It’s about 30 quid, and it’s beautiful,” she says. “Creamy, succulent, satisfying.” Naturally, it leads her to guacamole. “Being half Californian, I pride myself on mine.”
She makes the case: “The wine has creaminess and fruit. The guac mirrors that. Then the sweetness of the corn balances it all.” The pairing may not be obvious, but it works. “It rounds it out. Doesn’t overpower. And the citrus in the guac lifts everything.” There’s a pause, a laugh. “Finish: guacamole and Burgundy. Boy, am I.”
