Domaine Hudelot-Baillet Bourgogne Rouge '21

The wines of multigenerational and family-run Domaine Hudelot-Baillet are crafted under the careful supervision of Dominique Le Guen who took over the family estate in 1998 and has since worked diligently to maintain traditional Bourgogne winemaking methods. Located in Chambolle-Musigny (probably our favourite village for its beautiful, ethereal, uniquely delicate character) the 8ha winery is managed with sustainable practices, emphasising low yields. Grapes are hand-harvested, fermentation occurs with natural yeasts, and the wines are aged in French barrels, with a judicious use of new oak to add complexity without overwhelming delicate fruit flavours.
