Former professional dancer turned winemaker, Paul Old left the performance world to study his other passion, eonology, in Australia. In 2003, he established his highly acclaimed vineyard and winery in the Languedoc region. Paul meticulously hand-harvests organic grape varieties. These grapes are then fermented using vineyard yeasts in stainless steel to preserve the freshness and vibrancy of this limited-production blend.
