This single-site Pinot Noir from Burgundy’s Hautes-Côtes captures the cool poise of high-altitude vineyards with rare precision. Marthe Henry Boillot, daughter of Meursault’s Henri Boillot, established her domaine in 2017 to explore overlooked terroirs with quiet confidence and organic intent. From vines at 300–400 metres, it shows wild strawberry, rose petal and red cherry, with chalky tannins and a whisper of spice. The palate is weightless but taut, balancing floral lift with mineral line. Serve with mushroom tart, roast quail or rack of lamb. This high-altitude Burgundy Pinot Noir from a rising star producer shows bright red fruit and mineral finesse, ideal with game or mushrooms.
