Marthe Henry Boillot

Hautes-Côtes de Beaune 2018

Raised in Paris but rooted in Meursault, Marthe Henry Boillot crafts understated Burgundy with quiet intensity. This Pinot Noir is drawn from organically farmed parcels in the Hautes‑Côtes de Beaune, vinified with whole clusters and aged for 18 months in old oak. No fining, no filtration, just clarity of fruit and intent. Expect dark cherry, black tea and a flicker of violet. The palate is savoury and composed, with gentle tannin and a clean mineral core. Pair with mushroom tart, roast guinea fowl or buttery salmon. This organic Hautes‑Côtes de Beaune Pinot Noir shows cherry, violet and quiet structure, ideal with poultry or autumn vegetables.
