Palabres '22

Emmanuel worked for 20 years as an engineer, before training with Jacky and Véronique Ripoche of Domaine des Noades and in 2016 taking over the vineyards of Philippe Gourdon, a biodynamic pioneer in the Saumur appellation. Today the estate covers 3.8 hectares, spread over 5 plots in and around the village of Puy Notre Dame. The soils are mainly clay-limestone but each parcel brings subtly different elements to the blend. Palabres comes from a small 0.8ha parcel Clos St Jacques which was re-planted in 2012. Grapes are macerated on the skins for 8 days before pressing, sugars are then finished in tank where the wine stays for 7-8 months. No fining nor filtering.
