Vino di Sasso '23

Run by the Sclavos family, this boutique 15ha winery has roots that date back over 300 years. The name “Vino di Sasso” translates to "Wine of Stone," a nod to the limestone-rich soils on the Greek island of Cephalonia. Sclavos Wines has adhered to small production biodynamic principles since 1919, with dry-farmed, organic vines. "Vino di Sasso" is crafted from the indigenous grape Robola. The vinification process emphasises minimal intervention, with natural fermentation and no added sulfites, aiming to preserve the grape’s natural flavours.
