May’s bottles dive into fresh and light flavour perspectives, from winemakers such as Jean Boucabeille whose organic vineyard is home to over 100 beehives and Raúl Pérez, one of the most exciting of the new wave of Spanish producers.

Paving the way for cool-climate Chardonnay in Australia, Mountadam High Eden Estate is one of the country's oldest vineyards dedicated to Bourgogne style viticulture.

Pair with the savoury notes of baked fish, herb stuffed chicken, or pommes frites with classic aioli.

Expect stone fruit, nuttiness, and savoury notes.
