We’ve tucked away some of our bolder Ourglass bottles this month as we take our spin toward the sun. May’s bottles dive into fresh and light flavour perspectives, from winemakers such as Jean Boucabeille whose organic vineyard is home to over 100 beehives and Raúl Pérez, one of the most exciting of the new wave of Spanish producers.

This Bierzo Mencía from cult Spanish winemaker Raúl Pérez captures the elegance and lift that have made him a benchmark in modern Spanish wine.

Delicious with charcuterie like coppa or chorizo but works really well with warm salads and rich tomato sauce pasta dishes too.

Expect blackberry fruit, herbs, and freshness.

Marchesi di Grésy is well established as one of Piemonte's top producers, with four individual estates across Langhe and Monferrato – home of Piemonte's and Italy’s greatest wines.

Serve with Italian style sausages and stews (like this sausage and fennel ragu with cheesy polenta) or cep risotto.

Expect red berries, strawberry, spice, and black fruit.

The Chaves have been making wines in Rhône for 16 generations, developing over time a reputation for making the finest Rhône wines and among the best in France.

Serve alongside roast lamb with rosemary and garlic, a light dish like seared tuna steak, or Thai green curry.

This blend of syrah, grenache, and mourvèdre is textbook Côtes du Rhône and is drinking beautifully. Expect red berry fruits, garrigue, and pepper.
