Cabal Pinot Noir '19

Cabal Estate established in 2016, when Ed Clifford took over the reins from his father who previously his father sold fruit to Waipara winemakers.

Expect violet, black berry fruits, spice and light tannins. Super drinkable but with depth.

Pair with grilled eggplant, a clam and summer vegetable salad, or a hot and fragrant bowl of Sichuan beef soup.

Single Vineyard Pinot Noir

Tom Carson is a winemaker's winemaker, having served an apprenticeship at one of Burgundy’s most exciting domaines, Bernard Moreau in Chassagne-Montrachet and been labelled a ‘pioneer’ by wine critic Jancis Robinson. He’s put his fastidious attention to detail into scouring and selecting the perfect site and soil for Pinot Noir, for which he is primarily known alongside Chardonnay..

Serve with simply cooked rare meats like roast lamb with rosemary and garlic, earthy vegetable dishes like cep.

Expect red fruits, dark pitted fruits and a textured, fruity finish.

Winemaker Nicola Ferrari earned his reputation as a leading Valpolicella producer after a decade of winemaking at legendary Quintarelli Winery, his detailed care for vineyard terroir, and an obsessive pursuit of quality. The organic Monte Santoccio vineyard spans only 3 hectares across the rolling Italian hills of Fumane, home to the Ferrari family.

Pairs really well with lamb or pork dishes like pork and bean stew, and American barbecue. Or serve with salumi and pecorino.

Expect plum, spice, wood, freshness and fine tannins.
