We’ve tucked away some of our bolder Ourglass bottles this month as we take our spin toward the sun. May’s bottles dive into fresh and light flavour perspectives, from winemakers such as Jean Boucabeille whose organic vineyard is home to over 100 beehives and Raúl Pérez, one of the most exciting of the new wave of Spanish producers.

Cabal

Cabal Pinot Noir '19

Cabal Estate established in 2016, when Ed Clifford took over the reins from his father who previously his father sold fruit to Waipara winemakers.

Expect violet, black berry fruits, spice and light tannins. Super drinkable but with depth.

Pair with grilled eggplant, a clam and summer vegetable salad, or a hot and fragrant bowl of Sichuan beef soup.

Valdisole is located in the beautiful Langhe town of Corneliano d’Alba.

Serve with barbecued/smoky meat dishes, rich tomato sauce, and corn-based dishes like this sausage and fennel ragu with cheesy polenta.

Expect currants and rose, texture and freshness.

Franco Lourens works at Alheit Family Wines, one of South Africa’s leading winemakers.

Works well with meat like a griddled steak, vegetables off the BBQ, or scallops in garlic butter.

Expect lavender and almonds on the nose, and a balanced palate of red berry fruits, savoury notes, and freshness.

Palabres '22

Emmanuel worked for 20 years as an engineer, before training with Jacky and Véronique Ripoche of Domaine des Noades and in 2016 taking over the vineyards of Philippe Gourdon, a biodynamic pioneer in the Saumur appellation.

Serve slightly chilled with smoky bean dishes such as vegetarian chili, alongside blue cheese, or with a heaping plate of spaghetti and meatballs.

Expect redcurrant, wild raspberry, sour cherry and that unmistakably peppery quality.
