Max Halley – Episode 2
Filmed at Max’s Sandwich Shop in north London, this second slice of the Ourglass Tapes with Max Halley serves up a wildly creative pairing of Burgundian Pinot and Mosel Riesling with supermarket curry, mustard, and one eye on the sandwich press. “It looks like I’ve thrown up in a panini,” he jokes, before pouring a 2021 Bourgogne Pinot Noir from biodynamic producer François de Nicolay, a wine Max calls “humble but really not.”
What follows is a sensory ride through contrast and comfort. The Pinot pulls through with serious spice-loving energy, while a follow-up Mosel Riesling –clean, classic, and “probably my wine of the day” – surprises Max with how deftly it handles the heat and fat of the curry and crisped bread. “I expected the wine to be trampled on by the food,” he says, “and it isn’t.”
You can taste the pleasure. It’s a reminder that Riesling might be the best wine you’re not drinking, and that sometimes the best pairings come with zero pretension.
