Max Halley – Episode 3

Max Halley doesn’t believe in food and wine rules — and this might be his boldest pairing yet. In Part 3 of Ourglass Tapes, he pulls together two fish finger sandwiches, a bottle of Duncan Savage Sauvignon Blanc from South Africa, and a non-vintage white from Le Vendangeur Masqué – the side project of Burgundy’s cult growers, De Moor.

Max calls the Savage white “super fresh,” praising its zing and structure against the richness of the sandwich. “It feels like mayonnaise and stuff,” he says, grinning mid-mouthful. The wine's herbal lift and tight citrus acid hold their own brilliantly, rather than being “trampled on.”

The second wine, De Moor’s 'Caravan', catches Max off guard. “I really didn’t see it coming,” he says, reflecting on the gap between aroma and taste. The wine’s natural edge, open fruit and slight oxidative lift prove unexpectedly perfect. This is wine for flavour, not formality – an ethos shared across Ourglass Tapes.
