Virginie Moreau has risen to the challenge of succeeding her late husband, Stéphane, who was personally advocated for by Chablis legend, Vincent Dauvissat. Vineyard working is organic, hand harvested, with grapes picked at peak maturity. Cellar work is diligent, using 30% barrel-élevage without allowing any oakiness to deaden the wine’s characteristic zest, texture, and complexity.
