This natural Chablis from Kimmeridgian limestone soils is a benchmark in textured, terroir-led Chardonnay. Alice and Olivier De Moor have farmed organically in Courgis since 1989; low yields, native yeasts and old oak ageing define their hands-off approach. Expect lemon oil, oyster shell and bruised apple, with a creamy mid-palate and saline snap. The style leans gently oxidative rather than reductive, offering nuance and depth rarely found at village level. Unfined, unfiltered and bottled with minimal sulphur. Serve with grilled langoustines, leek tart or burrata with preserved lemon.
