Chablis

Alice and Olivier De Moor make organic, low-intervention Chablis from old-vine parcels around Courgis, vinified and aged in their grandparents’ cellar. L’Humeur de Temps shows citrus, green apple and oyster-shell tension, softened by old oak and lees ageing. Serve with braised fennel, grilled oysters or warm baguette with salted butter.
