Giusto Occhipinti of COS pioneered amphora fermentation in Sicily, perfecting the native blend of Nero d’Avola and Frappato through biodynamic farming and wild-yeast ferment.

Serve with the aubergine goodness of Sicilian caponata antipasto, a savoury comforting roast, or charcuterie.

Expect berries, black cherry, and ripe plum.

Cabal Estate established in 2016, when Ed Clifford took over the reins from his father who previously his father sold fruit to Waipara winemakers.

Expect violet, black berry fruits, spice and light tannins. Super drinkable but with depth.

Pair with grilled eggplant, a clam and summer vegetable salad, or a hot and fragrant bowl of Sichuan beef soup.
