7 Fuentes Tenerife Red

This volcanic Canary Islands red wine from old vines captures the rugged poise of Tenerife’s north face. 7 Fuentes blends mostly Listán Negro with a little Tintilla, grown at 300–700 metres on volcanic soils in the Valle de la Orotava. Vines are up to 150 years old and trained in the traditional cordón trenzado system. Partially whole-bunch fermented with native yeasts, the wine is aged in concrete and neutral oak. Expect smoky redcurrant, pepper and dried herbs, carried by Atlantic freshness and stony lift. The finish is savoury, fine-lined and gently persistent. Serve slightly cool with grilled octopus, sobrasada or aubergine.
