This single-vineyard Sancerre from legendary Loire producer François Cotat is drawn from the steep ‘culs’ or hills of Beaujeu—so precipitous they can only be farmed and picked by hand. François is probably one of the most distinctive winemakers working today, favouring late harvests, indigenous yeasts, and ageing in old foudres. The result is an expressive Sauvignon Blanc that resists convention. Expect orchard fruits, salinity and layered texture. A subtle hint of residual sugar gives lift without weight, while limestone grip sustains a long, savoury finish. Serve with scallops in brown butter, turbot, or veal blanquette.
