This single-vineyard Sancerre from organic producer Claude Riffault is grown on Kimmeridgian limestone in Sury-en-Vaux. Les Denisottes comes from 40–50 year old vines, farmed organically and biodynamically, and vinified by Stéphane Riffault—a winemaker known for energy, precision and purity. Fermentation is spontaneous; ageing takes place in tank and neutral oak to preserve texture without overt oak character. Expect preserved lemon, white peach and flint, with a chalky mineral line and firm, saline cut. The palate is bright, fine-boned and built on clarity rather than volume. Serve with oysters, goat’s cheese tart or courgette risotto.
