Naturally fermented and aged in a mix of foudres, concrete eggs and older barrels, it shows Donovan Rall’s signature light-touch approach. Expect citrus, white peach and pear, framed by flinty tension and a mineral spine. The finish is long, dry and quietly powerful. Serve with grilled fish, lemon chicken or creamy pasta.
