Cuvée Pressonier Bourgogne Rouge
This traditional Gevrey-Chambertin producer Bourgogne Rouge offers rare depth from old-vine Pinot Noir just outside the appellation. Cuvée Pressonier is made with whole clusters, cold soaks and long fermentation; the wine is aged in oak (around 30 percent new) for added grip and finesse. Expect black cherry, rose petal and earthy spice, with a savoury thread of forest floor. The palate is taut but layered; tannins are fine and mineral-edged. Late harvesting lends concentration without excess. Serve with roast duck, mushroom tart or aged Comté.
