En Billat

Jean-François Ganevat is perhaps the most celebrated natural wine producer of all. Rolling high-altitude Juran hilltops, schist soil and low-yield vineyards produce wines of place and purity. “En Billat” is a biodynamic single-vineyard Pinot Noir from the village of Rotalier in the Côtes du Jura. Ganevat’s precision and lightness of touch are on full display here. The wine is partially whole-bunch fermented with native yeasts and aged in older Burgundian barrels for up to two years. Expect lifted red cherry, rose petal and an underlying earthiness. The structure is fine, the texture diaphanous, the terroir beautifully expressive.
