La Bruja de Rozas

This high-altitude Garnacha from Sierra de Gredos granite is the gateway into Comando G’s biodynamic mountain wines. La Bruja de Rozas comes from old bush vines around Las Rozas de Puerto Real, grown at 800–900 metres and naturally fermented in large wooden vats. Daniel Gómez Jiménez-Landi and Fernando García favour gentle extraction and minimal sulphur to preserve transparency and lift. Wild strawberry, redcurrant and dried thyme lead into a palate that’s lithe, saline and stony. It hums with tension rather than weight. Serve lightly chilled with chargrilled vegetables, jamón ibérico or mushroom croquetas. This Sierra de Gredos Garnacha shows red fruit, herb and granite clarity, ideal with jamón or grilled vegetables.
