From the crisp, lively whites of South African winemaker Duncan Savage who advocates that ‘organic farming is all about timing and precision’; to the fresh, beautifully balanced Bourgogne-style reds of Edward Clifford and Theo Coles (Hermit Ram) at Cabal, a small family estate in New Zealand’s Waipara region, North Canterbury.
