This organic high-altitude Burgundy from Champs Perdrix showcases his meticulous approach to viticulture and vinification, including hand harvesting, gentle pressing, and minimal lees stirring. The vineyard sits at 350–400 metres on limestone-rich soils, bringing clarity and length to this expressive Chardonnay. Fermented with native yeasts and aged in older oak, it delivers lemon zest, white peach and a chalky mineral line. The balance between ripeness and tension is particularly striking. This organic high-altitude Burgundy from artisanal producer Jean-Yves Devevey shows citrus, stone fruit and fine mineral freshness, ideal with shellfish or creamy chicken.
