François de Nicolay
Cuvée de Beaux Jours
François de Nicolay’s Cuvée de Beaux Jours is a biodynamic Beaujolais Gamay from a winemaker better known for his work in Burgundy. Made outside the family domaine, this low-intervention red is grown on granite soils and fermented with indigenous yeasts; no fining, no filtration, and only a whisper of sulphur at bottling. It shows the same natural precision and focus de Nicolay brings to Chandon de Briailles. Vibrant and lifted, it carries redcurrant, cranberry and a suggestion of wild herbs. The palate is stony, fresh and dry-fruited with a cooling, mineral tail. Serve slightly chilled with charcuterie, lentil salad or roast beetroot. This Beaujolais Gamay shows redcurrant brightness and mineral finesse, ideal with charcuterie or roast beetroot.
