Les Terrasses Rouge
This terraced schist vineyard Côtes du Roussillon wine reflects the clarity and character of its rugged terrain. Les Terrasses is a blend of Syrah, Grenache and Mourvèdre, grown organically on steep slopes above Corneilla-la-Rivière. Vigneron Jean Boucabeille tends over 100 beehives and obsesses over vineyard health; the eleven hectares are hand-harvested and fermented with wild yeasts. Expect black plum, thyme and cracked pepper, underpinned by schist-driven minerality. Ageing in concrete and old oak adds quiet texture without dulling freshness. The wine is savoury, vivid and full of purpose. Serve with grilled lamb, cassoulet or roasted peppers.
